Lots of things are poisonous in large enough quantities.There's food grade (about 6% I think) and then there's industrial/laboratory grade, which is much much higher and very toxic

it's to kill bacteria in food so you don't get food poisoning which can lead u to get really sick for 3 days but remain alive . a human is much larger than bacteria and so a much higher dose is needed for lethality

it's also added in milligrams (per kilo, idk) or micrograms per serving... vs gramsN in a low dose works like a sleeping aid. It's all about the doseSimilar threads
