I love Cashew nuts. They're so sweet and delicious with a perfect texture, though if they weren't so incredibly hard to get here I'd opt for Macademia nuts more, as they're also delicious and have a favorable fatty profile with a lot of monounsaturated fats.
In my country, we call Brazil nuts "Pará nuts," and they're my favorite too. I remember I was always afraid of walking under the tree, because the nut comes inside a shell that's as hard as a bowling ball, and the tree is really tall lol.

Did you know if you soak cashews over night raw or roasted you can turn that into pasta sauce or frosting or even with coconut butter and coconut milk into frosting and its vegan.

Cashew + tofu absorb a lot of seasonings and sugars/salts so you can just about make anything, cheesecake, lasagna ricotta, cream cheese (neutral, sweet, salty)
i remember eating pistachios with my mom as a kid, i miss those days a lot, i enjoy peanuts a lot but because of how fondly i think of pistachios i think id have to go with them :D
