How long does it really take to go by dehydration. Some websites say as little as 3 days but I did that and felt absolutely fine. Also how long without eating before you start passing out? Someone told me 5 days but I've already made 11 and again feel totally fine.
I don't have many options open to me right now other than depriving my body and I just want to know what to expect.

Basically, death via starvation, your body literally eats itself alive. Then your organs shut down one by one while you thrash about in an insane fever delirium. Imagine being in literal Hell as you are dying and you pretty much get the picture.

i have attempted this before. yes. i went i believe nearly 4 days without food or drink. keep in mind that i am a young and healthy person so my body has high tolerance for things. i experienced no symptoms except feeling weak and a dry mouth (and obviously thirsty) until the last day. i had been fairly sedentary so i figured i needed to move more. i walked in circles for an hour (i was in the mental hospital so my activity was limited) and realized i was unable to sweat so i got hot very easily. by the last day my feet were losing color and i was extremely weak. the hospital staff managed to convince me to eat and drink so i didn't continue to find out what would happen after, but it is very very slow and i can't imagine it would feel very good once you pass that point.

not really... depends on age and health . Some say that you could get just really tired and weak, eventually pass out. it could take several weeks tho

Some people have been able to survive 60 days or longer without food - this is not a realistic suicide method. Goinog without water night work, but one person lived 18 days without water with no ill effects, so this again is an extremely difficult method to use. Do you have physical limitations so that other methods aren't feasible, or is there another method that might work?

I'm in the hospital with 2 people watching me all the time. I've managed a couple things but been stopped before they went far enough. Any suggestions are welcome

It may be best to wait until you are out of the hospital - it's probably not feasible in this situation. Is it a psych hold or something like that? If so, go alon with things as best you can to try to get released sooner, though I would avoid/ minimize medicatinos as much as possible- unless dealing with schizophrenia or something like that where medication is really needed.
