Testing Sodium Nitrite

I ordered some Nitrite and I'd like to test if it's the real thing. is there a way to do this?

I have my sodium nitrite. I bought a digital scale and was surprised that only a few teaspoons equals 20 grams? I thought it would be a much larger amount needed? I was wondering if perhaps my digital scale is not accurately measuring.

I guess you could buy blood from a butcher? But idk if the blood needs to be fresh
