I take 2 medications for my depression and anxiety which are Venlafaxine and Quentipine. How do these interact with SN and should I stop/use more of these?

Assuming you meant quetiapine, it has no known interactions with SN and can actually function as an antiemetic in the correct doses. See here for more information.
This would have been apparent to you from reading Stan's Guide, so if you have not already read it and the PPH, I would strongly urge you to do so per this thread.
As for the other medication, you can input it and Sodium Nitrite into the drugs.com interactions checker for answers.Similar threads
