This is probably dumb. But I'm in the US. And when I look to shop for SN, I have lots of options. Is there a... strength or anything I'm looking for? I know i need liquid. But other than that, why does it seem so easy?

the purity has to be higher than 95â„….
the ONLY ingredient has to be sodium nitrite, or NaNOâ‚‚.
this kind of product is usually design for lab tests and reactions. it's not like the curate salts that people who curate meat at home use, these curate salts have more than one ingredient and the percentage of NaNOâ‚‚ is very low - their purpose is not lab tests and reactions.
also, don't mistake nitrite with natrate.
yes it's a powder, but don't open the recipient to see what's inside, let it close instead, as it reacts with air.
