Those are actually the recommended ones in PPH, and the ones I purchased. I think it does say polyester in the PPH, but it's a typo. Polyester is a fabric, and does not hold up to high temperatures well, so i don't think I'd want my turkey wrapped in it. I posted photos of my setup:
