Isnt this the other way around? This is direct sourcing though, not allowed here. This bag says nitrate and it's kind of a weird consistency.

That's the opposite of what you want. That's Sodium Nitrate, not Sodium Nitrite (NaNO2). Sodium Nitrite turns to Nitrate if it has been exposed to much to air.

I found this quote that's similar to the one you posted. Now I'm wondering why nitrate doesn't kill you if saliva turns it to nitrite.

I'm still searching the discussions here on SS, hoping the answer is already posted.

Oh yes, the naturally occurring quantities are small. But you can purchase nitrate in larger quantities online.

The discussions here immediately dismiss nitrate as an option.

If our bodies can turn it into nitrite, I don't understand why it's so quickly written off.

Edit: I just read that approximately 5% of all ingested nitrate is converted to nitrite. So you'd likely have to drink a huge volume of nitrate to get a lethal saturaton of nitrite.
