Some posts say that taking SN causes snoring and moaning; I'm not sure if this would alert the hotel to something amiss.

If you can, I'd visit the hotel before, see the rooms at least. Maybe scout the area if needed, to find one where you'd be comfortable. If it's proper walls in between large enough rooms, I doubt too much moaning could come through, and surely snoring won't last a long time? Most people should be asleep if taken around midnight as per protocol, if the noises are not too unnatural it should be okay?
