Why is SN used in meat preservation if it prevents the blood from being able to carry oxygen properly after consuming it?

Apologies if this is a silly question, but I just don't get it!

Yes, I know the OP was asking a serious question, but I think GPE's 'to ensure the meat is really dead' line was sort of a joke, unless I've just completely misunderstood everything in this thread.
