If I just go to town on my legs with a knife what are the chances that I will bleed out before someone finds me or my body clots the wounds? Just trying to find the quickest way out without purchasing something extra right now.

Nothing. Short of hitting a major artery you will live. The body is very good at keeping itself alive and clotting off bleeding is high up on the list of things it can handle.

It's very unlikely you'll die from that. Billions of years of evolution shaped your body to be able to survive those kinds of injuries.

Not sure I'm understanding, but you want to stab yourself in the leg and then walk to town? If you want to bleed out, you need to hit an artery.

Hey there! I can cut my radial artery in the wrist, pretty easily. With a blank mind, no panicking. I have cut a few millimeters there under the skin. Just waiting for the day I'll go deeper.
How likely do u think, would the bleeding stop after blacking out, making u survive? From a 1 cm vertical cut above it? And the total blood volume is about 3 litres

Really low, bleeding out is only possible if you cut an artery, and still not 100% chance. For this you need to cut deeply into your body, need to know where it is, this require some high level of understand about it, since they are very well hidden, and without medical equipment you will not get to it because of the pain and SI. Its a dumb idea.
