I think most "obvious" ways of buying nowadays are either stuff that requires you to jump through hoops (prove you have a legitimate need and business) or is too low purity to be of use (re: most stuff off Amazon and "normie" sites). A butcher might offer nitrate but not nitrite.
Where I live we don't have any "local" butchers. Meat is sold either pre packaged in supermarkets, or cut up & wrapped by guys in the meat section of the supermarket. I'd guess that most meat curing is carried out elsewhere before it's shipped out for local distribution. It doesn't really seem a process which would take place locally.
