I'm happy I think. I got this off Amazon, and it is relatively easy to get where I live. I live in the county with large Amish populations, so most of the farmers & Amish hunt & set up the meat. Please let me know if it's the right one!

Wrong one I think. You want sodium nitrite.

Yeah. Should be nitr(i)te.
