Can I safely check its legitimacy before going all in?

I am not 100% but I think it should be white/yellow-ish ? Maybe you bought Nitrate instead of Nitrite?

likely to be prague powder, which is a low concentration of SN with regular salt used to cure meat. i wouldn't if i were you, sodium toxicity is painful and there's not enough SN for it to be lethal
